  • 1 can (14 oz) cherry tomatoes
  • 2 mozzarella balls
  • 4 garlic cloves
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 1 shallot (finely chopped)
  • 3 tbsp chicken broth
  • 3 tbsp chopped basil leaves
  • 3 tbsp grated Parmesan
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp sweet paprika
  • 1 tsp dried basil
  • 2 tbsp tomato paste
  • Crushed red pepper flakes (for sprinkling)

Instructions

  1. Preheat your oven to 200 °C (400 °F) if using an ovenproof skillet.
  2. Season chicken fillets with salt, black pepper, garlic powder, and paprika on both sides.
  3. In a large skillet over medium-high heat, heat olive oil and butter before adding the seasoned chicken. Cook until browned, about 5 minutes per side. Remove the chicken and cover with foil.
  4. Sauté minced garlic and chopped shallot in the same skillet for 2 minutes until fragrant. Deglaze with apple vinegar and simmer for another 2 minutes.
  5. Stir in salt, black pepper, dried basil, and tomato paste; cook for 1 minute.
  6. Add chicken broth and canned cherry tomatoes; bring to a boil and then simmer for 5 minutes.
  7. Return the chicken to the skillet with basil leaves and mozzarella cubes on top. Let it simmer for an additional 5 minutes or bake for roughly 10 minutes until golden.
