  • 1 lb ripe tomatoes (diced)
  • 1 small bunch cilantro (finely chopped)
  • 1/3 cup red onion (minced)
  • Juice of 1 lime
  • 1 jalapeño (seeded & minced)
  • 1/2 tsp salt
  • Ground black pepper (to taste)

Instructions

  1. Prepare the peaches by cutting them into quarters, removing the pit, and dicing into bite-sized pieces. Place in a large mixing bowl.
  2. Add diced tomatoes, minced red onion, minced jalapeño, lime juice, salt, and ground black pepper to the bowl.
  3. Gently stir until all ingredients are well combined. Cover with plastic wrap and refrigerate for at least 15 minutes to allow flavors to meld.
  4. Serve with tortilla chips as a dip or use as a topping for grilled chicken or fish.
