Instructions

  1. In a large bowl, whisk together flour, sugar, baking powder, salt, and optionally cinnamon.
  2. In another bowl, mix milk, egg, vanilla extract, and melted butter until smooth.
  3. Combine wet and dry mixtures; gently fold in diced peaches.
  4. Heat vegetable oil in a deep skillet to 350°F (175°C).
  5. Drop spoonfuls of batter into the hot oil; fry until golden brown on both sides.
  6. Remove fritters to drain on paper towels and cool slightly.
  7. Drizzle with glaze made from powdered sugar mixed with milk and vanilla.
