  • 1 small sweet onion (finely diced)
  • 1 cup shredded carrots
  • 3 garlic cloves (finely minced)
  • 1 teaspoon finely minced fresh ginger
  • ¼ cup chicken broth
  • 1 small head cabbage (about 8 cups shredded)
  • 3 tablespoons soy sauce or tamari
  • 1 tablespoon rice vinegar
  • ¾ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon toasted sesame oil
  • Cooked white rice
  • Green onions (green parts only, thinly sliced)
  • Toasted sesame seeds
  • Sriracha Mayo (optional)

Instructions

  1. 1. Heat 1 tablespoon of olive oil in a large skillet over medium heat and add ground turkey, cooking until nearly done (about 5–6 minutes).
  2. 2. Push the meat to one side; add diced onion and remaining olive oil to the other side. Sauté for 3–4 minutes.
  3. 3. Stir in shredded carrots, minced garlic, and ginger; cook an additional 2 minutes.
  4. 4. Deglaze pan with chicken broth, then mix in shredded cabbage, soy sauce, rice vinegar, salt, and pepper. Cover and simmer on medium-low for 12–15 minutes until cabbage is tender.
  5. 5. Stir in toasted sesame oil before serving over cooked white rice. Garnish with green onions and sesame seeds.
