  • 1/2 cup dill pickle juice
  • 1 cup cheddar cheese (diced)
  • 1 cup sliced dill pickles
  • 3 tablespoons fresh dill (chopped)
  • 3 tablespoons white onion (finely chopped)
  • 2/3 cup mayonnaise
  • 1/3 cup sour cream
  • 1/4 cup dill pickle juice
  • 1/4 teaspoon Sriracha
  • Salt (to taste)
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh dill (chopped)

Instructions

  1. Cook elbow pasta according to package instructions until al dente. Rinse under cold water and drain well.
  2. Transfer pasta to a mixing bowl and add 1/2 cup dill pickle juice; let sit for 5 minutes before draining.
  3. In another bowl, mix mayonnaise, sour cream, remaining dill pickle juice, Sriracha, salt, and black pepper until smooth.
  4. In a large serving bowl, combine drained pasta with diced cheddar cheese, sliced dill pickles, chopped fresh dill, and finely chopped white onion. Toss with the creamy dressing until well blended.
  5. Cover and refrigerate for 4–6 hours before serving cold.
