  • 1 cup orzo pasta
  • ½ cup sun-dried tomatoes, chopped
  • 2 cups chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 2 cups fresh spinach, chopped
  • ½ teaspoon red pepper flakes (optional)
  • 1 tablespoon butter

Instructions

  1. Season chicken breasts with salt, pepper, garlic powder, and Italian seasoning. Heat olive oil in a large skillet over medium-high heat and sear the chicken for about 5-6 minutes per side until golden brown and cooked through (165°F). Remove from skillet.
  2. In the same skillet, reduce heat and melt butter; sauté minced garlic for about 30 seconds. Add orzo and toast for 1-2 minutes.
  3. Stir in sun-dried tomatoes and chicken broth; bring to a simmer. Cover and cook for about 10 minutes until orzo is tender.
  4. Pour in heavy cream and stir in Parmesan cheese until melted. Add chopped spinach until wilted.
  5. Return the chicken to the skillet, spoon sauce over it, and simmer for an additional 2 minutes before serving.
