  • 2 pounds zucchini (cut into 1/4-inch slices)
  • 2 tablespoons butter
  • 3 cloves garlic (minced)
  • ½ cup heavy cream
  • ½ cup sour cream
  • 1 teaspoon Italian seasoning
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup grated Parmesan cheese (divided)
  • 1 cup shredded mozzarella cheese (divided)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Butter a baking dish. Cut zucchini into slices and sprinkle with salt. Let rest for 15 minutes, then wipe off excess moisture.
  3. Arrange zucchini slices in the baking dish.
  4. In a bowl, whisk together heavy cream, sour cream, Italian seasoning, onion powder, salt, pepper, and half of the Parmesan cheese.
  5. In a saucepan over medium heat, melt butter and sauté garlic for about 20 seconds until fragrant. Add the cream mixture and whisk continuously until bubbling.
  6. Stir in half of the mozzarella cheese until melted.
  7. Pour sauce over zucchini and sprinkle remaining cheeses on top.
  8. Bake for 18-22 minutes until golden brown.
