  • 4 ounces softened brick-style cream cheese
  • 1/4 cup granulated sugar (for cream cheese filling)
  • 3 tablespoons all-purpose flour (for cream cheese filling)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×5-inch loaf pan.
  2. In a bowl, combine the egg, pumpkin puree, sugars, coconut oil, sour cream, vanilla, and spices until smooth.
  3. Gently fold in the flour, baking powder, baking soda, and optional salt until just combined.
  4. Pour two-thirds of the batter into the prepared pan.
  5. In another bowl, mix cream cheese filling ingredients until smooth. Spread evenly over the batter in the pan.
  6. Top with remaining batter and bake for about 48 minutes until golden and a toothpick comes out clean.
  7. Cool in the pan for 15 minutes before transferring to a wire rack.
