  • 3 tablespoons olive oil (divided)
  • 1 tablespoon lime juice
  • ¼ teaspoon salt
  • 2 tablespoons fresh basil (minced)
  • ⅓ cup crumbled feta cheese (optional)
  • 2 tablespoons Italian dressing (optional)

Instructions

  1. In a small bowl, whisk together 2 tablespoons of olive oil, lime juice, and salt until combined.
  2. In a skillet, heat the remaining olive oil over medium heat and cook the corn until tender (about 5-7 minutes), stirring occasionally.
  3. In a large mixing bowl, combine the cooked corn with halved cherry tomatoes, finely chopped cucumber, and minced basil.
