  • 2 hard boiled eggs, peeled and finely diced
  • 3/4 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons sweet pickle juice
  • 1 tablespoon cider vinegar
  • 1 tablespoon granulated sugar
  • 2 teaspoons dijon mustard
  • Salt and pepper to taste

Instructions

  1. Boil a large pot of salted water. Cook macaroni until al dente according to package instructions. Drain and rinse with cold water; toss with olive oil.
  2. In a mixing bowl, combine the cooked pasta, bell pepper, celery, red onion, gherkins, cheddar cheese, and eggs.
