  • 1 cup chopped fresh cilantro leaves
  • 1 lime, juiced
  • 3 to 4 tablespoons extra virgin olive oil
  • 2 tablespoons harissa (or chili paste)
  • 1 ½ pounds peeled and deveined large shrimp
  • Kosher salt
  • Black pepper

Instructions

  1. Preheat your oven to 400°F.
  2. Roast the garlic by wrapping the trimmed head in foil with olive oil for about 10 minutes.
  3. Once cool, chop the roasted garlic finely.
  4. In a mixing bowl, whisk together chopped garlic, cilantro, lime juice, olive oil, and harissa.
  5. Heat a cast iron skillet over high heat. Season shrimp with salt and pepper and drizzle with olive oil.
  6. Cook shrimp for about 2 minutes on each side until pink (approximately 5 minutes total).
  7. Toss cooked shrimp in the garlic sauce and serve immediately.
