  • 1 tsp baking soda
  • 2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 2 cups grated zucchini (approximately 3 medium zucchinis)
  • 12 oz semi-sweet chocolate chips (8 oz for the mixture, 4 oz for topping)

Instructions

  1. Preheat your oven to 350ΒΊF and prepare two loaf pans by greasing them.
  2. In a large mixing bowl, combine sugar, eggs, vegetable oil, and vanilla extract, whisking until smooth.
  3. Add in flour, cocoa powder, salt, baking powder, baking soda, cinnamon, and nutmeg; mix until combined.
  4. Fold in the grated zucchini and 8 oz of chocolate chips until evenly distributed.
  5. Divide the batter between the prepared pans and sprinkle with remaining chocolate chips.
  6. Bake for 50-60 minutes or until a toothpick inserted comes out clean.
  7. Allow to cool before slicing.
