1 lb boneless chicken thighs, cut into bite-sized pieces
1 teaspoon cornstarch
1/4 cup light soy sauce
1 teaspoon sesame oil
2 teaspoons sugar (or honey)
1 tablespoon rice apple vinegar (optional)
3 cloves garlic, smashed
1 tablespoon cooking oil
1 medium zucchini, sliced
1 tablespoon oyster sauce
Instructions
Marinate the chicken by mixing it with cornstarch, soy sauce, sesame oil, sugar (or honey), vinegar (if using), and garlic in a bowl. Let it sit for 30 minutes.
Heat cooking oil in a wok over medium-high heat. Add marinated chicken and garlic; stir-fry for about 2 minutes until the chicken is no longer translucent.
Remove the chicken from the pan and set aside. In the same pan, stir-fry zucchini for about 5 minutes until tender.
Return the chicken to the pan with zucchini; add oyster sauce and mix well. Stir-fry for another 2-3 minutes until everything is cooked through.
