  • 1 lb boneless chicken thighs, cut into bite-sized pieces
  • 1 teaspoon cornstarch
  • 1/4 cup light soy sauce
  • 1 teaspoon sesame oil
  • 2 teaspoons sugar (or honey)
  • 1 tablespoon rice apple vinegar (optional)
  • 3 cloves garlic, smashed
  • 1 tablespoon cooking oil
  • 1 medium zucchini, sliced
  • 1 tablespoon oyster sauce

Instructions

  1. Marinate the chicken by mixing it with cornstarch, soy sauce, sesame oil, sugar (or honey), vinegar (if using), and garlic in a bowl. Let it sit for 30 minutes.
  2. Heat cooking oil in a wok over medium-high heat. Add marinated chicken and garlic; stir-fry for about 2 minutes until the chicken is no longer translucent.
  3. Remove the chicken from the pan and set aside. In the same pan, stir-fry zucchini for about 5 minutes until tender.
  4. Return the chicken to the pan with zucchini; add oyster sauce and mix well. Stir-fry for another 2-3 minutes until everything is cooked through.
  5. Serve hot over steamed white rice or noodles.
