  • 3 tbsp vegetable oil
  • 2 tbsp pure vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 1/2 cups cocoa powder
  • 1 1/2 tsps salt
  • 1.5 qts favorite ice cream flavor

Instructions

  1. Preheat your oven to 350°F. Grease two 8×8 inch baking pans and line them with parchment paper.
  2. In a mixing bowl, combine melted butter, granulated sugar, and light brown sugar. Beat until well mixed.
  3. Add eggs one at a time, mixing thoroughly after each addition.
  4. Stir in vegetable oil and vanilla extract until combined.
  5. In another bowl, whisk together flour, cocoa powder, and salt.
  6. Gradually add dry ingredients into the wet mixture until fully incorporated.
  7. Divide the batter between the prepared pans and bake for about 30–40 minutes or until a toothpick comes out barely clean.
  8. Allow brownies to cool completely on a wire rack.
  9. Thaw your chosen ice cream for easier spreading.
  10. Spread ice cream on one half of the brownie, then invert the second half on top and freeze for at least six hours.
  11. Let sit for a few minutes before cutting into squares.
