  • 1 can pineapple chunks (20 oz, with juice)
  • 0.5 cup brown sugar
  • 0.33 cup low-sodium soy sauce
  • 2 tablespoons rice vinegar
  • 1 teaspoon ground ginger
  • 1 tablespoon cornstarch
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a baking dish.
  2. Season chicken pieces with salt, pepper, and garlic powder.
  3. In a skillet, heat olive oil over medium-high heat and brown the chicken for about 4 minutes.
  4. In a mixing bowl, whisk together brown sugar, soy sauce, pineapple juice, rice vinegar, ground ginger, and cornstarch until smooth.
  5. Transfer browned chicken to the baking dish and pour the pineapple chunks and glaze over it; stir gently to coat.
  6. Cover with foil and bake for 25–30 minutes until chicken reaches an internal temperature of 165°F (74°C).
  7. Remove foil and bake uncovered for an additional 5–10 minutes to caramelize the glaze.
