  • 9 tbsp (134g) salted butter
  • 1/2 cup (125g) brown sugar, light or dark
  • 1/4 cup (40g) granulated sugar
  • 1 egg, at room temperature
  • 1 tbsp (15g) heavy cream, at room temperature
  • 1 1/2 tsp (8g) vanilla extract
  • 1 1/4 cup + 2 tbsp (190g) all-purpose flour
  • 1/2 tsp (3g) baking soda
  • 1/2 tsp (2g) baking powder
  • 1/4 tsp (1g) salt
  • 3/4 cup (120g) semi-sweet chocolate chips
  • 3 cups (300g) kataifi (shredded phyllo dough)
  • 1 cup (300g) pistachio cream/butter
  • 2 tbsp (28g) salted butter
  • 2 cups (475ml) heavy cream
  • 1 cup (170g) semi-sweet chocolate chips
  • Chopped pistachios, for garnishing

Instructions

  1. Preheat your oven to 350°F and prepare an 8×8-inch baking pan with parchment paper.
  2. In a saucepan, melt salted butter over medium heat until browned, then cool slightly.
  3. Mix together flour, baking soda, baking powder, and salt in a bowl.
  4. Combine sugars with brown butter, then add egg, heavy cream, and vanilla; mix well.
  5. Fold in dry ingredients followed by semi-sweet chocolate chips.
  6. Spread the batter into the prepared pan and bake for 22-27 minutes until golden.
  7. Toast kataifi in melted butter until golden brown; mix with pistachio cream.
  8. Prepare chocolate ganache by heating heavy cream and mixing with chocolate chips until smooth.
  9. Layer pistachio filling over baked bars, top with ganache, garnish with chopped pistachios, and chill before serving.
