  • 1 lb chopped cauliflower
  • 8 slices chopped turkey bacon
  • 1 pint halved grape tomatoes
  • 2 leeks (sliced)
  • 2 tbsp dill pickle relish
  • 1/2 cup keto mayonnaise
  • 2 tbsp mustard
  • Green onions
  • pink salt
  • cracked black pepper

Instructions

  1. Boil the chopped cauliflower in salted water for about 7 minutes until tender.
  2. Drain and spread on a baking sheet to cool completely.
  3. Preheat oven to 375°F. Roast halved grape tomatoes drizzled with olive oil for 20-30 minutes.
  4. Cook chopped turkey bacon in a skillet until crisp; reserve fat for cooking leeks.
  5. Sauté rinsed leeks in the reserved fat until translucent; let cool.
  6. In a mixing bowl, combine dill pickle relish, mustard, keto mayonnaise, salt, and pepper.
  7. In another bowl, mix cooled cauliflower with green onions, cooked turkey bacon, sautéed leeks, and roasted tomatoes. Add the dressing and stir to combine.
