  • 1 lb Mafaldine noodles (or fettuccini/linguini)
  • 3 chicken breasts
  • 4 tablespoons olive oil
  • 6 tablespoons butter
  • 68 cloves garlic, minced
  • 2 cups heavy whipping cream
  • 1.5 cups shredded parmesan cheese
  • 4 tablespoons blackened seasoning, divided
  • Salt and pepper

Instructions

  1. Pound chicken to an even thickness and rub with olive oil. Season generously with blackened seasoning.
  2. Heat a skillet on medium-high and add olive oil. Cook chicken for 3-4 minutes until browned, then flip and add butter and garlic. Cook until done.
  3. In the same skillet, melt remaining butter, sauté garlic, then stir in heavy cream and additional blackened seasoning. Simmer until thickened.
  4. Cook pasta according to package instructions, reserving some pasta water before draining.
  5. Combine cooked pasta with alfredo sauce, adding reserved water as needed to achieve desired consistency. Top with sliced chicken before serving.
