  • 1 & 1/2 teaspoons cinnamon
  • 2 cups shredded zucchini (about 2 medium zucchinis)
  • 1/2 cup butter (melted)
  • 3/4 cup brown sugar (packed)
  • 2 eggs
  • Optional: chocolate chips or nuts

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together flour, sugars, baking soda, baking powder, salt, cinnamon, and other spices.
  3. In a large bowl, mix melted butter with brown sugar, eggs, and vanilla until combined.
  4. Stir in the shredded zucchini into the wet mixture.
  5. Gradually add dry ingredients to the wet ingredients; mix just until combined.
  6. Fold in chocolate chips or nuts if desired.
  7. Pour batter into the prepared pan and sprinkle with raw sugar on top.
  8. Bake for about 60 minutes or until a toothpick comes out clean.
  9. Cool in the pan for 15 minutes before transferring to a wire rack.
