  • 2 medium zucchinis
  • ½ cup sugar
  • ¼ cup olive oil
  • ¼ cup almond milk
  • 1 tablespoon vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ⅛ teaspoon salt
  • ⅓ cup dark chocolate chips (optional)
  • ½ cup walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (180°C). Line a loaf pan with parchment paper and grease the sides.
  2. In a large bowl, mash the ripe bananas. Mix in sugar, oil, almond milk, and vanilla extract until well combined.
  3. Grate the zucchinis and squeeze out excess moisture before adding them to the banana mixture.
  4. Combine flour, baking powder, baking soda, and salt in a separate bowl. Gradually fold into the wet ingredients until just mixed.
  5. Optionally fold in chocolate chips and walnuts.
  6. Pour batter into the prepared loaf pan and bake for 55 to 65 minutes or until golden brown and a toothpick comes out mostly clean.
  7. Allow to cool completely on a wire rack before slicing.
