  • 2 large baking potatoes
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp black pepper
  • 0.5 tsp red chili flakes
  • 200g block of feta cheese
  • 1 head of garlic (top cut off)
  • 1 lemon, quartered
  • 1 tbsp honey
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 200C (390F).
  2. Wash and cube the potatoes; par-boil them in salted water for 6-8 minutes, then drain and steam dry.
  3. Place the par-boiled potatoes in a baking dish, season with thyme, oregano, salt, pepper, and drizzle with olive oil.
  4. Roast in the oven for about 30-40 minutes until golden and crispy.
  5. Make space in the middle for the feta; squeeze half of the lemon juice over it and add the garlic head.
  6. Roast again for another 15 minutes until everything is melded together.
  7. Mix mashed garlic with remaining lemon juice and fresh basil into the potatoes.
  8. Drizzle honey over the top before serving.
