- 2 large baking potatoes
- 200g block of feta cheese
- 2 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1 head of garlic
- 1 lemon
- Fresh basil
- 1 tsp salt
- 1 tsp black pepper
- 0.5 tsp red chilli flakes
- 1 tbsp honey
- Preheat your oven to 200C | 390F.
- Wash and cube the potatoes. Boil in water for 6-8 minutes, then drain and let steam dry.
- In a baking dish, combine par-boiled potatoes with olive oil, thyme, oregano, salt, and pepper.
- Drizzle oil on the garlic head, wrap it in foil, and add it to the baking dish.
- Roast for 30-40 minutes until golden and crispy.
- Remove from oven and place feta in the center; squeeze half a lemon over it.
- Bake for an additional 15 minutes until everything is perfectly roasted.
- Squeeze out roasted garlic into the potatoes, mix with remaining lemon juice and fresh basil.
- Drizzle honey on top and garnish with basil and chili flakes before serving.
