Ingredients

  • 2 large baking potatoes
  • 200g block of feta cheese
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 head of garlic
  • 1 lemon
  • Fresh basil
  • 1 tsp salt
  • 1 tsp black pepper
  • 0.5 tsp red chilli flakes
  • 1 tbsp honey

Instructions

  1. Preheat your oven to 200C | 390F.
  2. Wash and cube the potatoes. Boil in water for 6-8 minutes, then drain and let steam dry.
  3. In a baking dish, combine par-boiled potatoes with olive oil, thyme, oregano, salt, and pepper.
  4. Drizzle oil on the garlic head, wrap it in foil, and add it to the baking dish.
  5. Roast for 30-40 minutes until golden and crispy.
  6. Remove from oven and place feta in the center; squeeze half a lemon over it.
  7. Bake for an additional 15 minutes until everything is perfectly roasted.
  8. Squeeze out roasted garlic into the potatoes, mix with remaining lemon juice and fresh basil.
  9. Drizzle honey on top and garnish with basil and chili flakes before serving.
