  • 1/2 cup packed brown sugar
  • 1/4 teaspoon baking soda
  • 1 1/4 cups rolled oats
  • 3/4 cup flour
  • 1 cup apricot preserves

Instructions

  1. Preheat your oven to 350°F (175°C) and spray an 8×8 or 9×9 baking dish with non-stick cooking spray.
  2. In a mixing bowl, combine softened butter, brown sugar, baking soda, rolled oats, and flour. Mix until combined using a fork or pastry cutter.
  3. Measure out 2 cups of the oat mixture and press it into the bottom of the prepared baking dish.
  4. Spread apricot preserves evenly over the crust, leaving about 1/4 inch from the edge.
  5. Sprinkle remaining oat mixture on top of the apricot layer.
  6. Bake for 30-35 minutes or until golden brown.
  7. Allow to cool completely in the pan before cutting into bars.
