  • 1 ½ cups diced apples (Granny Smith or Honeycrisp)
  • ¾ cup all-purpose flour (for the crumble)
  • ½ cup light brown sugar
  • ½ cup unsalted butter (room temperature)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon ground cinnamon
  • 1 ½ teaspoons baking powder
  • ¾ cup granulated sugar
  • ½ teaspoon salt

Instructions

  1. Preheat your oven to 400°F and line a muffin tin with paper liners.
  2. In a bowl, combine crumble topping ingredients: flour, brown sugar, granulated sugar, and melted butter until clumpy. Set aside.
  3. In another bowl, mix dry ingredients: flour, baking powder, salt, and cinnamon.
  4. In a large bowl, cream together brown sugar, granulated sugar, and butter until fluffy. Add eggs one at a time along with the sour cream and vanilla.
  5. Gradually mix in dry ingredients alternating with milk until just combined. Gently fold in diced apples.
  6. Fill muffin cups three-quarters full with batter and top generously with crumble.
  7. Bake for about 20 minutes or until a toothpick comes out clean.
