  • 3 large eggs
  • 50 g brown sugar (for apple filling)
  • 1 teaspoon ground cinnamon (for apple filling)
  • 2 teaspoons cornstarch (for apple filling)
  • 50 g all-purpose flour (for streusel)
  • 50 g brown sugar (for streusel)
  • 20 g rolled oats (for streusel)

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Crush Biscoff cookies and mix with melted butter; press into a springform pan.
  3. Toss sliced apples with brown sugar, cinnamon, and cornstarch; set aside.
  4. Beat softened cream cheese until smooth; gradually add sugar, yogurt, vanilla, spices, and eggs.
  5. Layer half the cheesecake filling over the crust, add apples, then pour in remaining filling.
  6. Bake for about 85 minutes or until slightly jiggly; cool completely before refrigerating.
  7. Prepare streusel topping by mixing melted butter with flour, brown sugar, and oats; sprinkle over cooled cheesecake.
