  • 1 1/2 cups whole milk
  • 1 1/2 cups heavy cream
  • 1/2 cup granulated sugar
  • Pinch salt
  • 1/2 tsp vanilla extract
  • 5 large egg yolks
  • 1 cup apple butter
  • 6 tbsp all-purpose flour
  • 1/2 cup old-fashioned oats
  • 1/4 cup light brown sugar
  • 1/4 tsp cinnamon
  • 3 tbsp unsalted butter (melted)

Instructions

  1. In a bowl, combine 1 cup heavy cream and set aside a mesh strainer on top.
  2. In a saucepan, heat remaining heavy cream, whole milk, sugar, and vanilla until steaming. Gradually whisk into egg yolks.
  3. Return mixture to the pan and cook until thickened. Strain into the reserved cream to cool.
  4. Blend cooled custard with apple butter until smooth; refrigerate until chilled.
  5. For the topping, mix flour, oats, brown sugar, cinnamon, and melted butter. Bake at 375°F for about 10 minutes until golden.
  6. Churn ice cream mixture in an ice cream maker; layer with oatmeal crisp in a container and freeze for at least four hours before serving.
