  • 1 medium onion, diced
  • 1 large leek, thinly sliced

  • 3 stalks celery, sliced
  • 6 cups chicken broth
  • 1 can (13.5 oz) coconut milk
  • 1 1/4 lbs boneless chicken thighs or breasts
  • 1 teaspoon kosher salt
  • 3 cloves garlic, chopped
  • 1 teaspoon turmeric
  • 1 teaspoon poultry seasoning
  • 1 10 ounce bag frozen peas (optional)
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon kosher salt, or to taste
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté onions, leeks, carrots, celery, and salt for about 14–16 minutes until softened.
  2. Stir in garlic, turmeric, and poultry seasoning; sauté for an additional 2–3 minutes until fragrant.
  3. Add chicken broth and coconut milk; stir in raw chicken pieces. Bring to a simmer and partially cover with a lid. Cook for 15–20 minutes until the chicken is cooked through.
  4. Remove chicken to shred it into bite-sized pieces and return it to the pot along with optional peas and parsley. Heat through for about 5 minutes before serving.
