  • 7 quarts plain popped corn
  • 2 cups slivered almonds (or other nuts)
  • 2 cups packed brown sugar
  • ½ cup light corn syrup
  • 1 teaspoon salt
  • 1 cup unsalted butter
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • Dash of cayenne pepper (optional)

Instructions

  1. Preheat the oven to 250°F (120°C).
  2. Pop the popcorn according to package instructions and place in a large mixing bowl.
  3. In a saucepan over medium heat, combine butter, brown sugar, corn syrup, and salt. Stir until boiling and then boil without stirring for about 4-5 minutes.
  4. Remove from heat and mix in baking soda, vanilla extract, and cayenne pepper if using.
  5. Pour the caramel sauce over the popped corn and mix gently until evenly coated.
  6. Spread onto a parchment-lined baking sheet and bake for 45 minutes, stirring every 15 minutes.
  7. Allow to cool completely before breaking into pieces.
