  • ¾ cup panko breadcrumbs

Instructions

  1. Preheat your air fryer to 400°F.
  2. In a shallow dish, whisk together eggs, flour, salt, and black pepper.
  3. In another dish, mix panko breadcrumbs and parmesan cheese.
  4. Dip each zucchini slice in the egg mixture, then coat with the breadcrumb mixture.
  5. Place coated slices on a baking sheet; do not overcrowd.
  6. Arrange half of the slices in the air fryer basket, spray lightly with oil, and cook for 5-7 minutes.
  7. Flip the slices, spray again with oil, and cook for another 5-7 minutes until golden brown and crispy.
  8. Repeat with remaining slices.
