  • 1 medium yellow onion (chopped)
  • 1 packet chili seasoning
  • 2 cans fire-roasted diced tomatoes (14.5 oz each, undrained)
  • 1 can black beans (15 or 16 oz, undrained)
  • 1 can kidney beans (15 or 16 oz, undrained)
  • 1 can pinto beans (15 or 16 oz, undrained)
  • 1 can corn (15 or 16 oz, undrained)

Instructions

  1. Heat oil in a large pot over medium heat. Add chopped onion and sauté until softened, about 4 minutes. Stir in chili seasoning and cook for an additional minute.
  2. Add all canned ingredients to the pot without draining them. Cover and let simmer for approximately 15 minutes.
  3. For a richer texture, blend a cup of the chili in a blender until smooth and stir it back into the pot.
  4. Serve hot with toppings such as shredded cheese, avocado slices, sour cream, or crushed corn chips.
